I think half the fun of life is in embarking on adventures you’ve never done before, just to see what they would be like. Sometimes those are the scariest moments (like say, moving halfway across the world to a country where you knew nothing of the local language? ha), but sometimes they are also the moments best suited for growth and development. Not just in technique/skills, but also a personal evolution. I like to imagine a plate as a canvas, just waiting for flavors to come together and blend into new colors to paint the palate on the tongue. Comfort is tasty, and the ritualism that comes with the cherished and familiar always works. But that’s the thing. It’s safe, precisely because of its familiarity. The adrenaline from the rush of doing the unexpected isn’t present in comfort food – it is the very definition of the expected, and there is immense value in that. However, if I only ever did what was safe and comfortable, where would I be as a cook? As a person? Someone who only looks to past successes becomes very boring very quickly.

It is finally Autumn. The air spirals out of chilly noses in the mornings wisping into swirls of steam as children hurriedly rush to school. I’ve got my mug on my desk always filled with tea and a bit of honey, and there is that renewed sense of energy that everyone gets when the lazy days of Summer are over. The leaves are yellow and orange, one last burst of colorful energy, desperately trying to hang on to the unforgiving branches of the trees. We are in the last few days of glistening in the sunshine before the long gray Winter decides to take up residence for a while on the edge of our little lac, nestled up against the already snow-covered Alps.

Growing up in New England, clam chowder is total comfort food for me. There was this place on the shore that served New England style chowder in sourdough bread bowls… oh sweet heaven. The first time I took my husband to New England to see my old “stomping grounds”, I showed him my favorite things growing up, many of which involved food. What can I say, foods are strongly linked to memories. I had already decided at that point (and so had he) in our dating that we were meant to be. Aww, we were grad students, young and in love….

Where would Autumn be without chanterelles? I cannot believe that it was only a couple short years ago in grad school that I first came across this awesome mushroom, and fallen in love with it ever since. I tend to fall in love with lots of produce – in the Summer it’s strawberries and apricots and peaches, in the Spring asparagus…oh and we can’t forget pumpkin in the Autumn and Winter months as well. That’s not such a bad thing, is it? To go nuts finding as many tasty ways to use one incredible gift of nature? I don’t think so ;)

Chanterelles have been in season for a while now. I remember squealing with excitement when I first saw them at the market back in late August. I love using them for normal everyday cooking – toss them into an omelette, into risotto, or on pasta… Oh how I heart pasta. If I could, I probably would eat some type of pasta every day. My absolute favorite pasta is homemade egg pasta, which I taught myself how to make thanks to the wonderful Marcella Hazan and her fabulous cookbooks on Italian cooking. Converting the typical pasta recipe to gluten free is actually not so hard, though over time I did change things to make it a bit easier to incorporate the extra eggs needed. What better way to enjoy one of my favorite mushrooms than to share it on one of my favorite dishes?

French toast is one of those “candy-for-breakfast” meals that I treasure on cool mornings. There’s just something so relaxing about sleeping in, shutting all the windows to block out the trains passing by and the traffic down the street, instead to just take it slow. And this past weekend is no exception. Why? Amidst all the bustle of our work-lives, the weekend is our time to relax. There are some times on Saturday when we don’t get out of our apt. until noon, and it’s a beautiful beautiful thing.
