I oops’ed a little bit when I made those spring rolls with spicy peanut dipping sauce. Yes, I made a culinary mistake. But it is not a bad thing! The crime? I made too much wonderful spicy peanut sauce and had a bunch leftover. Don’t worry, the recipe on the post reflects the correct amount to go with the spring rolls. But now I was left with the conundrum, “What to do with leftover peanut sauce??” Well, it turns out the answer to that question is pretty simple – turn it into a noodle stir fry of course! This was a great idea, and took less than 20 minutes to throw together a quick tasty dish full of flavor. You can do this with just about any sauce, it is not limited to spicy peanut flavors, it just happened to be what I had around. Noodles are great because of how readily they absorb flavor and can quickly become the showcase for an awesome sauce – a quick fry in a skillet with a few veggies and garnish and you are done!
Sometimes a dish is all about the love and time that goes into it. Trust me, I have made plenty of those and the results have been quite rewarding. But sometimes a dish is all about the comfort that it brings due to its ease and freedom from intensive thought or concentration. This is definitely one from the latter category, because every now and then we need something fast, uncomplicated, and yet still jumping in our mouths, a celebration of taste. And while I love spending time in the kitchen all day cooking away, when an opportunity presents itself for enjoying the simplicity of a meal, I am not one to turn it down. Having leftovers of an awesome sauce sitting in my fridge just begging to be used, all the while reminding me of – no, rather enticing me with – memories my tastebuds had just the day before was just the excuse I needed!
8 oz. or so of rice noodles
2 tbs. oil (I used canola because it’s what I had on hand, peanut would probably be ideal though)
any veggies you like – bok choy, broccoli, etc., it doesn’t really matter
1/4 c. spicy peanut sauce
cilantro & roasted peanuts for garnish
1. Bring water in a pot to boil, add rice noodles and boil until tender (about 9 min for the thick stir fry noodles I have). Meanwhile, in a skillet, heat up oil, and saute veggies (med-high) until mostly done.
2. Add sauce to the skillet, and stir well. Add in noodles and stir so that all is evenly coated. Add a bit more oil if things are sticking too much.
3. Serve in bowls and garnish with peanuts and cilantro. Enjoy!
