One of the things that I love to eat in the morning is yogurt with granola and fresh fruit. Unfortunately so does my husband, which can be hard when granola typically contains oats – which if you want to buy gluten free, are like $15 for 2 cups of oats. It’s not even worth trying to bake my own granola for him. However, Trader Joes makes this gluten free granola that is fairly cheap and tastes great. They have a couple flavors, but by far the best is the cranberry/maple. Every time we go we literally buy out their entire supply. It’s seriously awesome. Most GF cereals are terrible, or just just some flavorless rice puffs, so it’s nice to actually have real “cereal” that he can eat.
This is often my style of breakfast in the morning – filling, natural, and tasty. I think this style of breakfast is a bit more trendy in Europe compared to your standard bowl of cereal/milk, but I’ve found I really like it better than your plain cereal in a bowl. Given how much yogurt I go through, I really do need to start working on making my own…maybe that will be something I start this summer.
Ingredients (for 1 serving):
1 cup plain low fat yogurt
1 banana, sliced
1/2 cup strawberries (or whatever fresh fruit is available), chopped
1/2 – 3/4 cup of your favorite granola (regular or GF)
2 tbs. honey
1. Add yogurt to a bowl.
2. Add in fruit and granola, drizzle with honey on top.
This is about 450 cal, which is great to last you through the entire morning before lunch!
