Caprese Salad

There are few things in the world that I love more than the delectable simple combination of quality fresh mozzarella, tomato, and fresh basil.  Fresh mozzarella can be hard to come by, but luckily my local market has some.  The difference between fresh mozzarella and the string cheese stuff you buy in the grocery store is on the order of worlds apart.  If you can, always always always get fresh mozz.  You will thank me!

So I took the ingredients for a traditional salad caprese, and turned it into a more traditional salad.  layering the roma tomato, mozz, then basil on top of a bed of greens, and then topping with a little bit of chopped prosciutto (cuase it’s my favorite meat ever), and a simple balsamic dressing made from EVOO, balsamic vinegar, some rosemary, some honey, and a little lemon.  That’s really it.  There isn’t much need for a full out recipe here, because that’s all there is to it.  But this extremely simple dish certainly hit the spot yesterday afternoon!
