Banana Peanut Butter Chocolate Chip Cupcakes!

Wow crazy title I know, but that’s what they are!

Tomorrow our work group is celebrating my birthday that was last week, and my boss’s 50th.  I offered to make cupcakes because well, I haven’t made cupcakes before, and wanted a fun project :)  I originally suggested carrot cake cupcakes, but my boss said that sounded TOO healthy, haha.  So I instead decided on these banana chocolate chip cupcakes and this peanut butter frosting.

I did make one change in the cupcake recipe.  Instead of a whole stick of butter, I did half a stick and substituted in peanut butter for the other bit.  It worked really well!  Here are the cupcakes just after they came out of the oven:

Then I created the frosting, and used a ziploc with the corner cut out as my piping bag.  I didn’t use any tips, just the open end of the tip holder thingies (I don’t know what they are called?) – the frosting was too liquidy to really have form until it set for a bit, so I just used it to make sure I got a *fairly* even coating of frosting on top – ok, this was a hard pic to take and it’s blurry, but I wanted to give an idea of what I was talking about.  And the cupcakes kept spinning, so I set them back in the muffin tray to hold them in place while I piped on the frosting:

Ha yes, as you can tell, I got frosting ALL over me.  I have no idea how people are able to make beautiful tasty food and keep everything clean.  My ENTIRE kitchen becomes involved and my ENTIRE kitchen becomes a complete mess, including myself.  If anyone has some tips on how to be a clean cook please let me know, haha I hate doing so many dishes and so much cleanup work!

And then a simple chunk of dark chocolate on top for garnish, and because I like chocolate :)
