I love making this salad, it always makes me think of summer. And even though it’s not quite summer yet, avocados and tomatoes were on sale this week (I know, not the greenest of me, but it was very budget friendly of me) and I felt like making it!
Jenn Cuisine
Ingredients:
1 avocado, sliced and chopped
10-12 oz. grape or cherry tomatoes, chopped in half
1 small onion, chopped
1 ball mozzarella (about 1-1.5 oz.), chopped
1 clove garlic, minced
juice from one lime
1 tbs. EVOO
1/2 tsp salt
1/2 tsp fresh ground pepper
Directions
1. Add all ingredients to a container with a lid.
2. Close lid and shake shake shake!
3. Eat.
4. To store, cover top of salad with plastic wrap, squish it down so that there are is no air between salad and plastic wrap – this will help keep the avocado pretty and green. Then put container lid on and store in fridge.

That looks delicious. I make a similar version that I add a ton of basil to – it is the only way I can get the kiddos to eat raw tomatoes! What a beautiful picture of a perfect summer salad!
Mmm basil – what a great addition, I will def. have to try that next time!
