I know I haven’t featured many salads on this blog yet, but they will come, don’t worry! This will be especially so once spring comes more and more fresh ingredients become available. This salad consists of stuffed olives, cubed prosciutto, baby greens, sliced tomato, asiago cheese, crushed walnuts, and hot balsamic reduction dressing leftoverfrom my mashed sweet potatoes that I made last week. Super easy, I don’t even think I need to put together a recipe, but I will list my ingredients and amounts for all of you who need exact measurements:
Ingredients (for two, entree size – not app size):
Half a container of organic baby greens
1 chopped stem tomato
1/4 cup crushed walnuts
8 stuffed olives from your favorite antipasti bar
1/8 cup diced prosciutto
1/8 cup shredded asiago
3 tbs. balsamic reduction, heated
This creates a nice filling salad with a lot of flavor, but virtually no effort in the kitchen!
