Bolognese Sauce

Bolognese is SO easy to make, very budget friendly, and yet so satisfying.  Sorry for a lack of recipe here, measuring really isn’t required for something like this – it can be changed to suit your personal preferences.  For my bolognese, I use a pound of ground turkey, and cook it in EVOO with onions (2), garlic (at least 3), and some italian spices.  Then comes fresh tomatoes (2) and some green bell pepper (1), and a very healthy portion of dry red wine (at least 1 cup).  The wine is so key to good bolognese.  It adds a richness and complexity to the dish that really brings it up a notch.  Then (cause sometimes I’m a cheat), I add in a jar of plain tomato sauce and a little bit of tomato paste, and let it simmer for a while (a good 2 hrs).  This is also very good for cooking in crock pots.

Since I usually make enough for like 10 servings, I freeze at least half of it, and when I want yummy sauce I just heat it up and put it over pasta or rice (you can use GF pasta if you want too)!
