Easy dish to make, if you use GF pasta it can even be gluten free! Serves around 2.
1. roast a head of garlic – chop off top (so cloves are exposed), drizzle with plenty of EVOO, and cover – roast in oven around 300F for an hour or so, until garlic is golden and mushy and mild in flavor.
2. in small saucepan, add roasted garlic cloves, a couple of sundried tomatoes, a little bit of wine (1-2 oz. max), more EVOO, fresh basil, salt and pepper. Mash it all together and heat it up a bit that you can incorporate everything together. You could easily add in a little heavy cream here too to make it a creamier sauce.
3. cook some pasta. toss with garlic/tomato mixture, add cheese on top. enjoy!
