Chocolate Tapioca Pudding

This was a childhood favorite of mine, and I still love to make it for dessert on a chilly day – this makes 3 servings, at just under 400 calories each…so make sure you have room to enjoy this treat (ha I just ate it for dinner)!.

1 egg, beaten
2.75 cups milk
3 tbs. tapioca
3 oz. choc. chips
2 tbs. cocoa powder
1 tsp. vanilla extract or Godiva liquer

1. Mix all together in a pot on Med.  Stir constantly until mixture comes to a full boil – i.e. still boiling even while you are stirring
2. Take off heat – add vanilla or liquer, and stir.  Let stand about 5 min, and serve hot.

This also very easily reheat-able, and some people actually like this cold, but I like to eat the pudding warm on a chilly winter night!

There is no picture of this because I cannot figure out how to take a good picture of chocolate pudding.  But trust me, it’s super yummy and while it takes a good 20 min., it’s very easy to make.
