Soba noodles are a great whole grain noodle – the only ingredients are buckwheat and whole wheat – I made this as an adaptation from this month’s Cuisine at Home with some shrimp, a package of stir fry veggies, and made a peanut sauce using peanut butter (the kind where the only ingredient is peanuts), broth, a little soy sauce, ginger, and lime juice. Stirfried in EVOO and mixed everything with the sauce, topped w/ sesame seeds and bean sprouts, and I have a great dinner that’s tasty and lasts a long time in my tummy!
Ha and yes, that is my bike in the background….wish it were warmer so I could use it…
