Last year I made truffles, and they were a HUGE hit – I did a dark chocolate, a raspberry tea/chocolate, a white chocolate/pistachio, and a chocolate/homemade caramel, and used really nice Valrhona chocolate:
But, this year I needed to do something different, and decided to do chocolate molds, which I haven’t made in a while. I did some last weekend, using just Ghiradelli chocolate cause I’m too poor right now for the good stuff.
Melting the confectionery candy – which I just used Wilson’s candy, here’s a pic of them starting to melt – I forget what this pan / ramekin set was originally intended for, but it was the perfect “double boiler” for melting these while the actual double boiler was used for chocolate:

I’m still going to make more, but hopefully people like them!
I also know that I totally need to perfect my painting skills, staying in the lines w/ paint brushes is hard….I think I need some toothpicks too. And now looking at this macro shot of my chocolates I see I didn’t get all of the air bubbles out either….boo….
