Mmm Squash Soup

Ok this soup came out great!!  I followed the recipe mostly…..except I didn’t use chicken stock I used some butternut squash soup (I know not homemade I’m sorry!  But it’s what I had on hand that I thought would help).  I felt that the apple was a bit overpowering, and wanted to use a squash soup to balance it out.  Next time I make this I would def. use a lot more squash and a lot fewer apples.  I did not peel the apples, cause apple skins are good for you.  I also did not reduce as much as the recipe said, I cooked it til it looked good, and then added cream followed the rest.  I think for this time I made a good decision switching the chicken stock for squash soup, but next time I’ll just make sure to have more squash on hand.  Still tasted nummy :)

Oh I also roasted the seeds, they are SOO much better than pumpkins seeds – the hulls seem a lot easier to chew and roasted in the oven w/ some butter, salt and pepper were so yummy!!
