New Fave – Spinach Pesto

I have started making this about once a week – for one, spinach is a lot cheaper than basil, and two it’s a tasty way to eat a lot of spinach -

This is fantastic to serve on top of pasta instead of spaghetti sauce, and then you get to eat lots of healthy spinach without it tasting so “green” :)
