New Fave – Spinach Pesto

I have started making this about once a week – for one, spinach is a lot cheaper than basil, and two it’s a tasty way to eat a lot of spinach –

one head of spinach, rip the leaves into smaller pieces
some pine nuts (1/4 cup is good)
a lemon
some olive oil
salt and pepper

In the food processor add the spinach, pine nuts, and squeeze the lemon juice, salt and pepper.  chop up the garlic and add it.  pulse the food processor to get everything mixed up, and add olive oil until the consistency is good.


This is fantastic to serve on top of pasta instead of spaghetti sauce, and then you get to eat lots of healthy spinach without it tasting so “green” :)
